Description

Cotija (pronounced co-TEE-ha) is a popular Mexican cheese named after Cojita de la paz, a town in the state of Michoacan. It is a versatile cheese made from cow.s milk that adds a mild flavor to dishes. Sometimes referred to as "Mexican Parmesan," Cotija serves a similar purpose in the Mexican kitchen to Parmigiano-Reggiano's role in Italian dishes.
Cotija is fun to experiment with as a grating cheese. The dry crumbled cheese adds a tangy saltiness to dishes when grated over them. Sprinkle it over salads, tacos, green beans, pasta, chili or dried-bean soups and stews. Black beans, enchiladas, tostadas and other classic Mexican dishes would be deprived without a generous shower of queso Cotija on top.
